Sur le site défensif de Saint-Puy s’est installée très tôt une population abondante. L’occupation de l’oppidum doit remonter aux Gaulois, les Garites dont parle César.
Dès le Xe siècle un château est signalé. Au XVIe siècle, la ville se compose de trois parties : au sommet le bourg castral, plus bas autour de l’église, le village ecclésial, et entre les deux, un quadrillage régulier (embryon de bastide). Le tout est ceint de remparts avec double bastion et quatre ou six ponts à herses couronnées de tours ainsi que de nombreuses portes.
Le château de Monluc, berceau de l’apéritif « Pousse Rapière », fut la demeure ancestrale du Maréchal Blaise de Monluc (1502-1577), Maréchal de France et Homme de Lettres. Les vieux murs du château sont chargés d’Histoire. Edifié au Xe siècle, détruit en partie, puis rebâti par Philippe Le Hardi, toujours habité, sans cesse remanié, les rois de France et d’Angleterre se le disputèrent plus de 100 ans.
L’église date de 1685, certainement reconstruite après le passage des huguenots.
